Vegetables à la Mediterranean

Ingredients for 4 servings

FITAKI in Oil 100 g

Garlic 1 clove

Red onion 1

Red pepper 1

Yellow pepper 1

Yellow pepper 2

Aubergine (small) 1

Tomatoes 250 g

Olive oil 2 tablespoons

Clear vegetable broth 100 ml

Fresh thyme 1 teaspoon

Salt and pepper to taste


  • 1 Peel the garlic and cut into thin slices. Peel the onion and cut into cubes. Clean the vegetables and cut them into wedges.
  • 2 Fry the onion and the garlic in oil. Add the vegetables and fry while stirring them constantly.
  • 3 Add the broth and boil covered on low heat for 10 minutes, stirring from time to time.
  • 4 Add the FITAKI to the vegetables and season with oil from the jar, add salt and pepper.
It is recommended to serve the vegetables with ciabatta, rice or pasta, or as a side dish with grilled lamb chops or fish. The vegetables can also be prepared in the oven.
