The typical Mediterranean meal served first is the meze – a great variety of starters. These can include anything from marinated vegetables, olives and grilled feta cheese to stuffed vine leaves. The main thing is that everything is fresh, natural and delicious.
Aioli is the traditional Mediterranean sauce prepared from olive oil, garlic, egg yolk and lemon juice with possible additions, for example, of pear or mustard. It is usually served with grilled meat, seafood and croutons.
Retsina is a traditional Greek wine with a resin-like aroma and very strong flavour – this is why it is usually served with richly seasoned meals.
Because of its unusual taste, it is practically impossible to include it as part of a wine menu, and it is better to leave it as the only wine served at a meal.
